Russian Hill Chicken


Instructions

Sauté onion in hot oil in skillet, just until they turn yellow. Do not brown the onions. Remove and set aside. Salt and pepper the chicken and brown on all sides. Add the wine and sautéed onions to the browned chicken. Cover and cook until the chicken is tender (typically about 30 minutes). Just before serving, add the cream and heat only until the cream is warm. Do not boil or the cream will curdle. Serve with rice or mashed potatoes.

  • 1 cut up fryer
  • 1 cup of white wine or cooking sherry
  • 1 medium onion (sliced thin)
  • 1 cup of heavy cream
  • 1/4 cup of cooking oil
