Peanut Brittle


Instructions

Put peanuts, water, syrup, sugar, and salt in boiler and heat to boiling. Stir until the sugar melts. Reduce heat to medium and continue cooking until syrup reaches hard crack stage. Syrup will be amber colored and peanuts will begin to pop. Remove from heat and add the vanilla, then add the soda and stir until it is well mixed. It will foam up. Pour on a well buttered surface and pulling from the outside edges, pull it to be very thin.

 

Ingredients

  • 1 cup of raw peanuts
  • 1/2 cup of light Karo/corn syrup
  • 1 tsp. of vanilla extract
  • 1 cup of sugar
  • 1/2 cup of water
  • 1 tsp. of baking soda
  • pinch of salt
