Luxurious Chicken Salad


Instructions

Boil the chicken until done. Let cool in cooking water until cool enough to handle. Remove skin and bones and slice chicken into small pieces. Place in a bowl, cover with cooking liquid, and refrigerate. While chicken is cooling, mix the soy sauce, honey, and salt in a small bowl. Add the minced garlic to the bowl and set aside. Chop the green onions and put in a small sauce pan with the finely sliced ginger root, dried red chili pepper, and the peanut oil. Heat until the mixture simmers. Remove from the heat and add to the soy sauce mixture. Shred the lettuce, put on individual salad plates. Arrange chicken on top of lettuce, and spoon over chicken for 5-10 minutes before serving to let flavors blend. Garnish the salad plates with cherry tomatoes or tomato wedges to finish.

  • 1 whole chicken (3 1/2 - 4 lb.)
  • 1/2 cup of soy sauce
  • 4 tbsp. of honey
  • 1 tsp. salt
  • 2 cloves of minced garlic
  • 4 green onions
  • 8 slices of fresh ginger root
  • 1 tsp. dried red chili pepper
  • 6 tbsp. peanut oil
  • Lettuce
  • Cherry tomatoes
