Lemon Squares


Instructions

Mix the flour, butter, and 1/2 cup of confectioners sugar together well with a pastry knife or hands. Press the mixture into a greased 9x13 inch pan. Bake at 350º for 15 minutes. As this bakes, beat the eggs. Grate the lemon rind. Add the sugar, lemon juice, lemon zest, baking powder, and salt. Mix together and then pour over the first mixture in the pan. Bake at 325º for another 20 minutes. While still hot, sprinkle confectioners sugar lightly over the top. Let cool before cutting into small squares. Tastes lovely with seafood.

  • 2 cups of flour
  • 1 cup of butter
  • 1/2 cup of confectioners sugar
  • 4 eggs
  • 2 cups of sugar
  • 5 tbsp. of lemon juice (fresh squeezed is best)
  • 1 lemon rind
  • 1 tsp. of baking powder
  • pinch of salt
  • extra confectioners sugar
