Chicken and Rice Casserole


Instructions

Bring chicken and first four ingredients to boil, then cover and simmer for 1 hour. Skin, bone, and cut chicken into bite size pieces. Strain liquid and use to cook rice. Sauté mushrooms and mix with sour cream and soup. Add rice and chicken. Use 2 1/2 or 3 qt. casserole. Sprinkle with almonds. Bake at 305º for 1 hour.

Ingredients

  • 1 whole chicken (fryer)
  • 1/2 cup of celery (cut up)
  • 1 1/2 tsp. salt
  • 1 cup of sherry
  • 1 small onion (cut up)
  • 1 lb. or 8 oz. can of mushrooms
  • 6 oz. of wild & long grain rice
  • 1/2 cup of butter
  • 1 cup of sour cream
  • 1 cup of mushroom soup
  • Slivered almonds
